Personable and very Hands-on
This isn’t a shiny, automated mega-distillery. Mathew and Julie are known for being hands-on. They designed and built their own pot still, tuning cuts and temperatures by eye and by feel, and run much of the process themselves. The result is authenticity! Small runs, great cask, (think bourbon, port, sherry, shiraz, pinot, even 20L French oak), and releases that feel like a handwritten letter rather than a mass-produced postcard.

Makes for a very bold first impression with peaches and cream, layered in cinnamon and maple syrup. The palate follows through with that same lively stone fruit character, balanced by brown sugar, toasted hazelnuts, and sticky dates that coat the tongue with richness. As it fades, a vibrant medium finish reveals just the faintest wisp of salt, leaving a lingering freshness.
