Lawrenny Estate sits on a sprawling property established in the early 1800s by Lieutenant Edward Lord—one of Tasmania’s pioneering settlers. Once an 80,000-acre farming estate known for premium livestock, barley, and hops, the property was reborn in 1991 when the Mace family took over the once majestic estate. Since purchasing Lawrenny, they have returned the property to its former glory of luscious gardens, fertile pastures and breading Black Angus beef cattle that are among the finest in the world.
Today, Lawrenny Estate Distillery stands as one of the very few paddock-to-bottle whisky producers in the world—where every step, from growing the barley to bottling the whisky, happens on or near the same land. That’s more than just a slogan; it’s a philosophy of authenticity that honours both the land and the craft.
Lawrenny sits on the banks of the Upper Derwent River, an hour northwest of Hobart. Here, the air is crisp, the soil fertile, and the seasons distinct – ideal conditions for whisky maturation.
The water that shapes every drop begins in Lake St Clair, Australia’s deepest freshwater lake. As it flows through the valley, it collects minerals and purity that form the heart of Lawrenny’s spirit. This is terroir in its truest form, creating whisky that captures the essence of the Tasmanian wilderness.
1. Barley Born on the Estate
Lawrenny grows its own barley on the estate, ensuring every grain reflects the land’s unique characteristics. This homegrown grain is then malted and milled specifically for the distillery’s needs – a rare practice in modern whisky making.
2. Water from the Heart of Tasmania
The Derwent River provides an abundant supply of crystal-clear water, used throughout the process, from mashing and fermentation to bottling. This contributes to Lawrenny’s clean, crisp spirit profile.
3. Copper Stills & Craftsmanship
Lawrenny’s spirit is crafted in two copper pot stills – 2,000 litres and 900 litres, allowing precise control of character and consistency. The smaller scale supports experimentation with different yeast strains, including those borrowed from the craft beer world (saison, wheat, and barley-wine yeasts). The result? Depth, fruitiness, and a natural malt sweetness rarely found elsewhere.
4. Maturation in Carefully Selected Casks
Maturation takes place in a traditional timber bond store by the river. Lawrenny sources premium ex-bourbon, port, sherry, cognac casks and more, each imparting layers of character.
Tasmania’s fluctuating temperatures help the spirit breathe deeply within the wood — accelerating flavour development and adding signature richness.
