Wellington distillery is located at 130 Fairy Glen Road, Collinsvale 7012, where Eden whisky is distilled, crafted, matured and bottled nestled in the foothills of ‘kunanyi’, the indigenous name for the iconic Mt. Wellington in Tasmania. It’s there where owners and distillers; Dale and Claire William pride themselves on creating exceptional whisky that embody the essence of their pristine surroundings. With a deep appreciation for nature’s gifts, the team is committed to crafting whiskies that harmonise with the beauty of the land and water that surrounds them.

One of their key secrets lies in the pure water utilised in their mashing and distilling process. Sourced from the nearby Wellington Park, this water has cascaded through streams and gullies, filtered through rocks formed aeons ago before flowing directly to the distillery through gravity-fed channels. It carries with it the untouched purity of kunanyi/Mt.Wellington, lending a distinctive character to their whiskies that sets them apart.

As of August 2024, the distillery will be changing owners with Dale staying on for an additional 12 months to guarantee the same quality spirit is released from this underrated, hidden gem.
