Wellington distillery is located at 130 Fairy Glen Road, Collinsvale 7012, where Eden whisky is distilled, crafted, matured and bottled nestled in the foothills of ‘kunanyi’, the indigenous name for the iconic Mt. One of their key secrets lies in the pure water utilised in their mashing and distilling process. Sourced from the nearby Wellington Park, this water has cascaded through streams and gullies, filtered through rocks formed aeons ago before flowing directly to the distillery through gravity-fed channels. It carries with it the untouched purity of kunanyi/Mt.Wellington, lending a distinctive character to their whiskies that sets them apart.
