The Fossey’s Ginporium and Distillery is located at 110 Eighth Street, Mildura, VIC 3500. Fossey’s have made their name on distilling and creating an eclectic range of Gin elixirs that have put them front and center of the Australian Gin making scene. The next step of their evolution was to produce single malt whisky and that’s exactly what they’ve done! Distillery owner, Steve Timmis made history in 2019 by becoming the first person to distil single malt whisky in Mildura having launched his new ‘Fossey’s Whisky’ brand in May, 2019, with the new venture close to three years in the making.
To start his whisky journey whilst waiting for his own distillate to mature, Steve Timmis turned to good friend, mentor and highly rated whiskey-maker, Brian Hollingworth. Brian is the head distiller and owner of Black Gate Distillery in Mendooran, NSW who’s been creating award winning whisky since 2012 with over 30 years’ experience. Fossey’s first batch, was distilled off-site in partnership with Brian, however, today – Fossey’s also have their own small variety of whisky in the market earning some great reviews.
