Lark Distillery
Established 1992, the Lark Distillery is located in Cambridge, about a 20 minute drive out of Hobart’s CBD. The founder, Bill Lark, is known as the Godfather of Australian whisky having been inducted into the Hall of Fame at the World Whisky Awards in London in 2015, becoming the first distiller in the southern hemisphere to ever receive such an honour. Bill Lark realised that everything you need for a world-class whisky was in Tasmania – rich fields of barley, an abundance of wonderfully pure soft water, peat bogs and the perfect climate to bring all the ingredients together in a marriage of science, art and passion. The vision of producing Tasmanian malt whisky was born on a trout fishing trip in the highlands of Tasmania.
Australian Whisky Holdings was renamed Lark Distilling Co. in May 2020.The following month, Lark completed the sale of the Overeem business to Sawford Distillery. In October 2021, Lark Distilling announced it would acquire Kernke Family Shene Estate, owner of the Pontville Distillery and Estate. In February 2022, CEO Geoff Bainbridge resigned, and Laura McBane took over as interim CEO until the appointment of Satya Sharma in May 2023.
