Manly Spirits Co. is located at 4a/9-13 Winbourne Rd, Brookvale NSW 2100 and is the brain child of David Whittaker and Vanessa Wilton, who own and operate the artisan spirits distillery hidden in plain site on the Northern Beaches of NSW, the first of its kind in the area. Their inspiration is to capture the harmony between carefree beach life and urban poise for which Manly is renowned as they create Single Malt Whiskies, Australian Gins and Botanical Vodkas that are, and will rival the best in the world whilst staying true to their roots and sense of terroir.

Although they produce stunning vodkas and gins, we’ll be concentrating on the divine liquid they currently have ageing in a variety of ex-Bourbon American oak casks, Ex-Fortified wine French-oak casks and Ex-Australian Wine casks – Pinot Noir and Shiraz, all under their ‘Coastal Stone’ label. Distillation is performed in two bespoke 1000L and 1500L copper pot stills that were designed by co-owner, David Whittaker (formally educated as a chemical engineer), with there first Sherry cask release coming to market in the final quarter of 2021.
