William McHenry & Sons Distillery was established in 2011 and rests on the side of Mount Arthur on the Tasman Peninsula in Tasmania. At 43 degrees south, it’s Australia’s southern-most distillery and with its family heritage, makes it the southernmost family run distillery in the world.
William McHenry and his family specialise in hand-made single malt whisky and high quality spirits as their southern location benefits from the cool-moist-oceanic environment, giving the maturing spirit the perfect conditions to make the most of its time in the wooden barrels. Port Arthur has some of the cleanest air and water in the world and this purity helps to transform the single malt whiskies into something quite remarkable. The maritime character also adds a distant iodine note to the whisky, a quality that is highly appealing to whisky enthusiasts around the world. The property also has an abundance of its own, pure spring water which becomes the heart of the developing spirit with all the other base ingredients sourced locally as well.
