Spirit Thief was born from the humble beginnings of kindred spirits; Tasmanian whisky lovers conspiring with one of South Australia’s most elusive winemakers to mature the island’s finest in curated and re-coopered red wine casks. Today, individually profiled red wine barrels are hand-picked from renowned wineries – each producing terroir-typical, best of varietal and region wines – carefully shaved by their skilled coopers then toasted and charred to their specification.
With the help of the ‘White Label Distillery’ in Tasmania, (a distillery that exists purely to create spirit for other start-up and established distilleries) Spirit Thief are producing beautiful independent bottlings. After 18 months apprenticeship on the distillery floor at ‘White Label’, the Spirit Thief team secured their own still and manufacturers licence on the same premises, plus two on-site bond stores, now holding in excess of 350 casks of maturing single malt whisky. They now also make their own spirit on an 1800L wash still and an 800L spirit still designed and built by the infamous Peter Bailly of Knapp Lewer.
Inspired by the skills founded in traditions honed by the generations before us, Spirit Thief’s whisky relies on collaboration; we are artful, but repentant; there is always honour among thieves.
