Sullivans Cove Distillery is located at 1/10 Lamb Place, Cambridge-Tasmania.
It’s the second oldest whisky distillery in Tasmania which was established in 1994 at its original location around the old brickworks at Sullivans Cove. Then in 1999, the distillery was purchased by two businessmen from Canberra who went on to distil a further 629 casks of spirit of vastly improved quality and in late 2003, after a two-year halt in production, the barrelled whisky, still and equipment was bought by a third group and moved to Cambridge, on the outskirts of the city where current head distiller Patrick Maguire took over distillation and cask selection. By 2007, Sullivans Cove started to gain international recognition with their American Oak winning Liquid Gold (95/100) in Jim Murray’s Whisky Bible and ‘Best Other Malt’ (whiskies outside of Scotland) at the World Whiskies Awards. In 2014 when the French Oak cask HH0525 was named Best Single Malt Whisky in the World at the World Whiskies Awards, the distillery and the Tasmanian whisky industry in general shot to international acclaim.
The majority of their whiskies are aged in either 300L French oak ex-tawny barrels or 200L American oak ex-bourbon barrels then allowed to mature over many years in the unique Tasmanian climate – generally between 6 and 9 years.
