Waubs Harbour Distillery is located at 42 Waubs Esplanade, Bicheno TAS 7215 in an old oyster hatchery right on the ocean’s edge on the east coast of Tasmania that has been converted into a world class production facility.
The distillery materialised from a question Tim Polmear (co-founder) posed to his brother Rob Polmear (ex-Lark Distillery Head of Production & Overeem Whisky Head Distiller) around the fire, whisky in hand, in early 2017….. “If you could make whisky your way, using the best equipment in the perfect location, how would you do it?”
Fast forward to 2023 and that question has well and truly been answered with the distillery releasing their three inaugural whiskies. A true maritime Tasmanian single malt style that not only embraces but encourages the influence of the wild, coastal provenance, made meticulously and with intention to be rich, oily and distinctively Waubs own!
