Founded in 1846 by Hector Henderson, the Caol Ila distillery is situated on the west coast of Scotland in Islay near Port Askaig overlooking the cove and the Paps of Southern Jura. It’s the largest of eight working distilleries on the island of Islay and draws its water from Loch Nam Ban, whose water travels through peat and limestone before reaching the distillery. Lauded by malt lovers across the world, Caol Ila produces a lighter whisky, pale in colour with peppery, peaty and floral notes. Most of the distilleries output is used in Johnnie Walker blends with about 5% kept for the production of their signature single malt whisky.
