Daftmill is one of Scotland’s smallest and newest single malt Scotch whisky distilleries located in a converted meal mill at Daftmill Farm in the Howe of Fife, an area along the east coast, north of Edinburgh. The distillery was named by the locals, who found it quite “Daft” that the geography of the area caused an optical illusion where the resident stream was running up hill, a backward running stream to be precise and hence, “Daftmill” was born.
Owned by the Cuthbert family, they’ve been harvesting malted barely on their Daftmill farm for 6 generations. Then in 2003, brothers Ian and Francis applied for permission to commission a whisky distillery and the licence was granted by HMRC in 2005. Since the property is still a working farm operating alongside the distillery, it only runs in the farm’s quiet periods; mid-summer and winter, sometimes producing as few as 100 casks per year. When not distilling, Francis and Ian Cuthbert looks after the estate, growing the malting barley used to make this Lowland whisky.
