The Distillery comments;
“To celebrate our history with Bayswater and Melbourne’s Outer East, and in the lead up to our relocation to Kensington in 2022 – We have created a limited number of commemorative bottles titled “Farewell Bayswater 1999-2022”. These will be the final bottlings of Bakery Hill Whisky, created, distilled and matured completely from our original Bayswater North distillery on the famous Gatwick Rd. 

The Double Wood is a reflection of the impact of rich, soft oak on the pure Bakery Hill unpeated new make spirit. The liquid is initially laid to rest for up to 7 years in an American Oak Ex-Bourbon barrel from Jack Daniels, before being transferred to a virgin French Oak ex-wine barrel that is shaved back to bare wood, and then given a light toast to highlight the oak itself – rather than any of the previous contents of the barrel.

The exchange between both American and French Oak styles establishes a unique richness of flavour alongside fresh vibrancy of the spirit. If you enjoy a rich, complex whisky which tastes like Christmas in a glass – the Double Wood is the Bakery Hill whisky for you!
