PALATE: Smoky and fruity, quite sweet with some cold ash aromas, caramel, earthy like a campfire in a warm summer rain, burned apricot,
FINISH: more warm smoke towards the end, slightly meaty, still earthy like a warm summer night with some rain drops falling on a paved road.

Description
Released in 2014 for the first time, this is alchemist, Peter Bignell’s 2020 edition of his rare and revered Belgrove peated rye. It’s his fourth release Peated Rye Whisky aged for 2.5 years and cut at 50%. This is a grain to glass model with the obvious benefit that all aspects are under Peter Bignell’s control.
He built and owns the only Australian self-sustaining distillery and constructed his own 500 litre copper pot still which he directly fires with biofuel (used cooking oil) from a roadhouse next to his farm.
