Our tasting notes.
The nose is spot-on, and at 67% ABV, a marvel of balance. It’s jammy, rich in fudge aromas and layered with blood orange and warm oak. The palate brings warm spice, backed by dark chocolate, buttery caramel and almond croissant. A few drops of water unlock the full depth of this complex pour.

Description
Clyde Mill Distillery is owned by the Ramsay family, long-time Bothwell farmers who have revitalised the former Nant and Lark Estate in Tasmania, reclaiming it as Clyde Mill for its exceptional grazing benefits and paddock-to-glass potential. With a clear vision to honour Tasmania’s whisky heritage, the Ramsay’s have bottled select whisky that was distilled at the Bothwell estate between 2019 and 2021 under their Clyde Mill label, while laying down their own spirit for future releases.
Part of the ‘Preview Series’, this release is believed to have been crafted by Jack Sellers (now with Spring Bay) and Blair Whitehead (before joining Callington Mill). Two highly regarded distillers in the local scene. Drawn from a single Seppeltsfield Apera cask from the Barossa, this release produced just 100 bottles and was bottled at a natural cask strength of 67% ABV. It’s a bold, deeply satisfying Australian whisky that rewards patience and time in the glass.
