A robust yet youthful whisky with plenty of toffee notes and fruit cake characteristics that brings on baked spices, subtle oak and a warming, moderate finish. Add a few drops of water and you’ll be rewarded with many more layers both on the nose and palate.

Bottling Notes
Just Derek is the first release by the independent bottling arm of the Craft Works Distillery, owned and operated by Craig ‘Crafty’ Field. Crafty sourced his new-make (spirit) from an undisclosed Sydney distillery and matured it at his distillery in Capertee NSW, in a deep char, coopered, 100L American Oak ex-sherry barrel that was over 40 years old.
Only 155 bottles were yielded of this expression that was named after a very close friend of Crafty’s whose name was Derek. The story of Derek is quite special and if you visit Crafty at his distillery or bump into him at a whisky event – ask him about Derek and how he came to name a whisky in his honour. 😉
