Cutt Hill’s initial release program will comprise of multiple, (IB) private cask bottlings while they patiently wait for their newly produced spirit to mature. All the barrels for their ‘Private Barrel Series’ have been maturing at their facility for a number of years, individually benchmarked and thoughtfully vatted together by Cut Hill’s head distiller. Each expression showcases the diversity and quality that Australian wine, fortified and mead casks have to offer.
A combination of vintage port, tawny and muscat casks are used to showcase and explore Australia’s rich fortified heritage. Barrels selected by the distillery for this expression date back as far as the early 1900’s and have matured some of the country’s most iconic fortified wines
Our tasting notes.
A rich nose of cherry ripe chocolate, rum balls and plump fresh figs gives way to a thick and juicy palate of sweet malt and vanilla bean. The finish is moderate with brown sugar and a touch of clove coming on late. Overall, a nicely balanced whisky.
