Starts a little thin, but time in the glass works wonders on the Tawny and Shiraz marriage revealing swirling notes of cappuccino, banana skins, halva (toasted semolina) and milk duds. Traditional raison flavours and distant hints of char linger quietly in the background leading to a medium and warming finish. At 43% ABV, it’s an easy drinker and a good starting point for the beginner’s journey into Australian whisky while still having the bones to appeal to the seasoned whisky drinker as well.

Description:
Cut Hill’s initial release program will comprise of multiple, (IB) private cask bottlings while they patiently wait for their newly produced spirit to mature. All the barrels for their ‘Private Barrel Series’ have been maturing at their facility for a number of years, individually benchmarked and thoughtfully vatted together by Cut Hill’s head distiller. Each expression showcases the diversity and quality that Australian wine, fortified and mead casks have to offer.
This inaugural release Wine Cask expression was distilled at McLaren Vale Distillery and is a marriage of 5 x 100L octave barrels (ex-Shiraz) from Barossa, Eden Valley, McLaren Vale and 1 x 200L hogshead ex-Tawny (originally Bourbon cask). The whisky was matured for between 2 and 4.5 years yielding 900 bottles for sale.
