For this release, Dark Valley celebrates the aromas, flavours, and time taken to make great whisky by metaphorically (and cheekily) linking the process to those in the legal fraternity. The Barrister’s Wig is a symbol of austerity and dignity in the legal profession, and whisky, just like tomes in a law library, needs time to be fully appreciated as well.
To create this whisky, Dark Valley sourced ‘new make’ from the Adams Distillery in Perth, Tasmania that was distilled in December 2016, and then matured the spirit in a 20L Port cask at their custom build facility in Malbina, Tasmania. Once the whisky was deemed ready, it was then bottled at a cask strength of 65.7%alc.
