Bottling Notes

Tasmania was a barren place for those facing transportation. Once incarcerated, the thoughts of many prisoners turned immediately to escape. The penitentiary at Port Arthur, nigh impregnable, was the first hurdle in a convict’s plan to flee, with other hurdles such as sharks, hounds and rifle fire all irrelevant if the guard’s whistle sounded. A whisky that puts you in the moment, and demands all your concentration.

To create this whisky, Dark Valley sourced ‘new make’ from the Adams Distillery in Perth, Tasmania that was distilled in March 2017 and then matured the spirit in a 20L Pinot cask at their custom build facility in Malbina, Tasmania.
Congratulations to Dark Valley who were announced INDEPENDENT BOTTLER OF THE YEAR in the Non-Scotch category at the 2019 Independent Bottlers Challenge in the class that included Australia, India, Japan, Taiwanese and other European whisky. Great work team!
