Signal to Noise is a phenomenal example of what an Australian Sherry cask whisky should be – Delicate almost to the point of been understated. The 51% ABV balances the spirit out beautifully finding the sweet spot between complexity and flavour with no overbearing tannins or hot spots present at all. Think hazelnut ice-cream and sherry dipped shortbread on the nose followed by a palate of dark chocolate, toffee pops and toasted oak with a medium finish that brings through the creamy sherry quite late.
