Description:
This year’s 2025 Dark Harmony is an 8-year-old Oyster Stout (yes, you read right 😉) finished, American Oak Single Malt – the fourth release in Hellyer’s Road’s experimental beer cask series, and perhaps its most adventurous expression yet.

Building on last year’s heavily peated Black IPA finish, which carried maritime notes of iodine and coastal salinity from Hellyer’s peated malt, the distillery once again turns to the ocean for inspiration. For this fourth Tasmanian whisky release, oyster shells were added to the boiling wort while brewing the imperial stout in collaboration with Communion Brewing Co.
