Valero and Elisa Jimenez, owners and distillers at the Joadja distillery have once again hit the ball right out of the proverbial park with their 3rd release of their very 1st PX cask offering. The vessel used was a 128L ex-Pedro Ximenez, American-oak cask that was maturing PX sherry for approx. 13 years before they filled it with their very own ‘new-make’ spirit resulting in a flavour bomb choc-full of raisins, figs and spice.
Non-chill-filtered and handcrafted using 100% Australian barley and pristine water from the distilleries on site spring, the ex-PX barrel used was personally sourced by the Jimenez family from their native home in the Bodegas of Andalucia, Southern Spain.

This is Australian whisky turned up to 11 – Unpretentious, raw, and full of youthful attitude. Add a few drops of water if you feel the need to tame this beast and it will continue to reward long past the first sip.

NOSE: Powerful dark fruits up front followed by deep vanilla, red velvet cake, leather and oak.
PALATE: Big and punchy with a youthful kick, nice and oily – pure PX. Opens with sugar dusted raisins, some blood orange peel and brandy snaps.
FINISH: – Blackcurrant pie with molasses and deep leather. White pepper emerges with oak. Lingers
