This is the 4th release from Valero and Elisa Jimenez, owners and distillers at the Joadja distillery.
Non-chill-filtered and handcrafted using 100% Australian barley and pristine water from the distilleries on site spring, it was double distilled in copper pot still and then laid to rest in ex-oloroso sherry casks that were personally sourced by the Jimenez family from their native home in the Bodegas of Andalucia, Southern Spain.

It’s horses for courses….and this is definitely the dessert course.
It’s The Noble One of Whisky…I loved this with a cheese platter after dinner and imagined sipping on a glass while enjoying a rhubarb crumble in front of a Southern Highlands open fire.
It’s a sign of a good drop that has the ability to transport you to the locale and terroir of the making.
What do I mean? At first I’d say the flavour is almost close to golden syrup in character. Think…Pillow biscuits, fig – sultanas….but more subtle, closer on the spectrum to stewed apricot.
It has a lovely full mouthfeel, great oily legs on the glass…unchill filtered…unadulterated….those Spanish casks…shining through….Easy to drink from the get go.
If you’re looking for a night cap or an after dinner apéritif….or you just have a sweet tooth…you could do a lot worse than back this horse for the win.
