“Our story begins at Clover Hill in idyllic North-East Tasmania. We took in an oak barrel of Clover Hill’s Sparkling exhibiting classic Pipers River terroir. Once disgorged, the cask was immediately refilled with mature Single Malt Whisky from Killara Distillery in Richmond Tasmania for a mere 4 weeks.
The very same barrel, now deeply imbued with both Sparkling Wine and Whisky flavour notes was taken to Iron House Brewery overlooking the Tasman Sea. The cask was again filled, this time with a sweet Black Milk Stout for a casual 8 weeks. Finally, our barrel once more made its way back down to Killara Distillery, to be filled with this limited release Single Malt Whisky for an opulent Black Velvet finish.”.
About Killara Distillery
The distillery was established in 2016 by Kristy Lark-Booth and is located at 32 Ogilvie Lane Richmond, about 30min from Hobart in Tasmania. It’s the first distillery to be owned and operated by a second-generation distiller. The name Killara is a nod to Kristy’s parents, Bill & Lyn Lark who started the modern-day whisky industry in Australia back in 1992. Killara is the name of the street where Kristy grew up where the first distillery was registered over 150 years after the last distillery in Hobart closed its doors.

Oh my god! Oh why god! That’s all I’ve been saying for half an hour. This is incredible. Pours looking like a Guinness extra stout. Definitely dark ale in there. A sparkle from the Clover Hill and deliciously rounded off with what I would call typical Killara notes. In the grammy award winning song from 1990, ‘Black Velvet’ Allana Myles sings “The sun is settin’ like molasses in the sky…..A new religion that’ll bring ya to your knees. Black velvet if you please”. I couldn’t say it any better myself.
