Official Tasting notes:
Nose: Bright and light, full of warm tropical juice notes and savoury corners. Guava and mango sticky rice lead the charge, the spirit character taking centre stage before wafts of mixed nuts and antique furniture emerge with air and point to the French oak. Classic Sullivans Cove tropical notes are there all the way through (pineapple and kiwi), there is a bright and crisp side to the fruit profile of the nose that presents granny smith apple and fresh ginger, as the nutty quality of the oak deepens into sesame oil and fried shallot.
Palate: Upon entry to the palate immediately notable is the full and rich mouthfeel – this is some seriously thick and vibrant spirit! The tropical fruits burst through the door, kiwi and pineapple again, but this time they’ve taken on a deliciously tangy, fermented quality. Light and delicate fruits continue to fill the top notes (watermelon, raspberry), and the oak expresses notes of Bounty chocolate bars and pink bubble-gum, met by biscuity flickers and even more fresh, shaved coconut.
Finish: The finish is buttery, briny, tropical, a little meaty, and deliciously oak-forward. Warming and with an alluring edge of French oak spice, notes of cocoa and forest soil meet Piña colada and salted jerky.
