Nose: Fresh pops of zesty orange syrup tickle the nose, before waves of caramelised pineapple cubes, freshly ripened nectarines, and cinnamon spiced apples gleefully roll in. Lots of fruit to begin with, very much letting the spirit shine through, then onto classic American Oak and Bourbon influences of toasted marshmallows, coconut sponge cake with flickers of marzipan. Notes of heather and fresh-cut grass sneak in the background as the whisky opens in the glass. This whisky is enticing you in for a sip from the get-go.
Palate: As the whisky flows onto the palate memories of Bakewell tarts come to the foreground, with a heady mixture of vanilla pods, almond sponge cake and salted butterscotch. The syrupy texture of Sullivans spirit covers the palate and allows fruity tingles of salted peaches and ripe pineapple bounce on top of it. Hues of malt biscuits, toasted beech wood and sugar-coated fennel seeds (hello, Sullivans spirit!) slowly come in at the back palate, and a little cayenne pepper swings on in at the end for good measure.
Finish: As the palate fades, we’re left with sensational hits of dried beech wood and salted liquorice wheels. Freshly cracked peanut shells mixed with dried apricot pips come in to play, complimenting the woody notes. The finish jumps from dry and woody to fruity and sweet with hits of honey-soaked hay, and leaves a lovely white pepper note at its suns
