Nose: Creamy and bright, with a zesty lift that quickly deepens into layers of spice – clove, anise, cardamom, cinnamon, nutmeg, ginger and pimento, all laced with finger lime. The whole spice cupboard. Anchored by roasted pumpkin and buttery pastry notes, lifted again by fresh honeycomb, macadamia, strawberry jam, raspberry liquorice and a cool hint of spearmint jelly.
Palate: Full and weighty with a waxy mouthfeel, swelling into layers of anise, herbal notes, black cat lolly and jelly babies. Brandy-soaked fruit loaf, sautéed plums and raisins meet chilli dark chocolate, brandy cream and vanilla custard cannoli for a multi-faceted, deeply satisfying experience.
Finish: Light of heart yet long in shadow, the finish carries a gentle tannin structure that fades to a silky mouthfeel Notes of raspberry tart, maple-drenched waffles, icing sugar and dissolving chocolate powder linger, alongside nutty praline, whipped ganache, hazelnut, macadamia and salted pistachio.

Description:
This Double Cask batch number DC120 is a marriage of portions from ten different casks, ranging in age from 6 to 18 years. As well as whisky from several American oak ex-Bourbon casks, this batch also contains whisky from both American and French oak casks, which have been previously used for either Tawny, white wine, or red wine. Eight of the casks were distilled in the Tasmania Distillery (TD) era under Patrick Maguire (Year: 2008-2016).
Each batch of Sullivans Cove Double Cask whisky is bottled at a variable ABV. By tailoring the ABV for each batch, the Distillery can choose a strength that brings out the best in the whisky. For DC120, the sweet spot came in at 47.4%.
