Producer’s tasting Notes
NOSE: Herbal and fruity (figs and prunes), candied ginger, nutty, strong honey with pine needles, toasted almonds, and flax. The mild herbal notes (rosemary, eucalyptus and menthol) hang around. There is a hint of woodsmoke, but it is hidden behind the herbs and honey.
PALATE: Rich and unctuous, a rich jammy flavour with some woodsmoke, rosemary and eucalyptus, scorched almonds, cured game meats: sweet and savoury like kangaroo/venison in a port and mixed berry jam marinade with allspice, figs and raisins.
FINISH: Herbal honey and slightly medicinal (Allens Throaties), stewed fruits, tiny hint of paperbark, good length.
