Palate: Fantastic age while still light and vibrant, mint, camomile with leather, berry and banana bread.

Description
Triple distilled; the liquid was drawn from casks that were salvaged before the distillery’s untimely closure in the early 1990’s. It’s a marriage of refill ex-bourbon and ex-sherry casks comprising of scarce stocks from just before the Falkirk site was mothballed in 1993. Despite spending over three decades in casks, this beauty still retains a crisp and zesty nose, with hints of lime lollies and lemongrass.
Marked ‘Release Two‘, it represents the second in a limited edition series of annual expressions by the brand while we await for their first ‘new’ whisky to be released under Ian Macleod Distillers. Only 150 bottles were allocated to the entire Australian market making this one rare entry on our sunburnt shores.
Distillery Manager Malcolm Rennie comments:
“This is the first Rosebank release during my tenure as Distillery Manager and I’m under no illusions as to the importance of this launch. The spirit was distilled before the distillery closed its doors and has matured in casks ever since, waiting to be awoken. It fills me with great pride to know that the 31-Year-Old will be the last ‘old Rosebank’ release before the distillery is re-opened to the public.
There is a real sense of anticipation in the air with the new distillery nearing completion and most of the equipment in place. The project is due for completion in mid-December and I have an experienced distillery team of five who are all raring to go ahead of our official opening in early 2023.
The revival of this sleeping giant is a huge moment for the whisky community, but most importantly for the people of Falkirk who have patiently awaited its return for three decades. It’s safe to say that it will be an immensely emotional moment to see the spirit flowing through the Rosebank spirit safe once again”.
