“The subtler influence of the refill cask is evident at the nose: yes, it’s nutty and winey, but not in a dominating way. The sherry is subdued and well integrated with the typical distillery aromas, which take some time to unfold: earthy, slightly leathery, very organic and slightly oxidative. A pleasant note of sour fruits (peaches and apricots), too.
On the palate we have cereals, bread dough, and then it turns towards a drier style. Liquorice, a hint of herbs and camphor: balsamic, but still fresh (plenty of candied oranges) and not heavy-handed. An ale-like malty fragrance. There’s just a slight increase of tannins and spice in the finale, but it still ends on a citrusy and farmy note”
