Official tasting notes.
“At the nose it’s still lively and very fresh, ripe with youthful fruitiness: bananas, peaches and candied oranges. At the palate there is a hint of medicinal herbs and spices, but tannins are well controlled and the oaky bitterness remains subtle: it’s obviously old, with the structure and complexity of its 40 years, but still sunny, extremely fruity and playful. Only towards the end the spicy and dry influence of the Oloroso starts to dominate, with a very peppery and astringent finale”

Description
This Wilson & Morgan independent bottling of 40yo Dailuaine single malt Scotch whisky showcases the remarkable results of time and restraint. Matured for four decades in a refill Oloroso sherry butt, it’s one of the longest maturations ever seen for Dailuaine. The subtle influence of Spanish sherry slowly unfolds with exceptional clarity.
The result is a beautifully evolved Speyside Scotch whisky, offering pronounced sherried character, a dry and elegant mouthfeel, and layered nutty complexity, all delivered without overpowering oak. A rare and highly collectible release, perfectly suited to Australian whisky collectors and drinkers seeking mature, refined single malts with provenance and balance.
