Introducing Wild Rye – the first release from Bree and Leigh Atwood, owners and distillers at Backwoods Distilling Co, as we wait patiently for their single malt whisky to mature.
Heritage Ryecorn is the chief ingredient used in their Wild Rye as it delivers wonderful and diverse flavours. The mash bill also includes barley for sweetness, wheat for nuttiness, and a small amount of chocolate malt. After fermenting with a selection of speciality yeasts, the process is finished with the lid open to allow for a secondary fermentation as the mash is infected with local airborne yeasts, particular only to Backwoods.
The wash is distilled twice and a very tight cut is made to ensure that only the gentlest portion of the heart is taken. What remains is spirit that is rich in spice and sweetness, handcrafted from grain to glass.
