Introducing Eden whisky – The Pride of Mt. Wellington!
There’s some serious magic happening in the foothills of kunanyi (aka Mt. Wellington), Tasmania. It’s where Dale Williams ardently plies his trade at Wellington Park distillery bottling delicious single cask whisky using some of the freshest water in the world.
This marriage of a South Australian Apera Cask #15 (French Oak) and a Virgin American Oak Cask #13 that has resulted in something which is both unique and very special. The vatting breakdown consists of two parts cask 015 and one part cask 013. New Make Spirit for both was distilled from a mash of Tas Pilsner Malt and the wash was fermented for 7 days.
Cask 015
A small format 20 litre McWilliams Apera (French Oak) cask which received a heavy char from Tasmanian Cask Company. Distilled in November 2020 and matured for 2 years.
Cask 013
A small format 20 litre Virgin American Oak, air dried for 3-years on Tasman Peninsula and also coopered at Tasmanian Cask Company with Heavy Char. Distilled on the 24th of August 2020 and matured for 2 years.
