Our Tasting notes.
Nose: An ensemble of flavours starting with moist Cuban-Behike cigar leaf, cherry ripe, baclava and boysenberry ice cream that soon morph into plum jam, black honey, tree sap and fig flesh. There’s the slightest hint of struck match (could be the outdoor fire-pit playing tricks?) in a fragrant tail that sits beautifully.
Palate: Pure velvet. Exuding warm dark chocolate, scorched almonds and more jammy notes from the nose with Turkish coffee, cinnamon sugar and sun ripened plums.
Finish: Luscious and warming with subtle spice and some oak punching through.
Conclusion: Reminds me of the tamer Tassie Heartwoods.
Spellbinding – A winter’s night dram by the fire that will keep you warm as layers of flavour reveal themselves in a devilishly constructed whisky.

Bottling Notes
This is the very first release from the (independent bottling) liquid library of Dan Woolley’s extensive, global whisky adventures that was aged at Lord Byron Distillery in Byron Bay. From all around our great country of Australia, spirit has made its way on the highway to Byron Bay to age in the rarest, hand selected oak casks to mature into Highwayman single malt whisky
Two small Apera casks and one small Tawny cask were married together post-aging and given a second maturation in a French oak super heavy char, ex-dry red wine cask before being bottled at cask strength.
Each bottle is numbered and signed with handwritten details on the back label. Bottle necks are hand dipped in black wax and presented in a branded bottle bag.
This inaugural release sold out in under 10 minutes on the Lord Byron website and is destined to become investment grade Australian whisky. We just had to open our bottle and it’s an absolute meaty beast of an Australia single malt. Check out our tasting notes below.
