Official Tasting Notes
Nose: Intense fleshy stone fruit – peaches, nectarines and apricots drizzled in butterscotch syrup. Faint sandalwood incense spice reminiscent of Mizunara oak.
Palate: Sweet and sour lemon sherbet coupled with orange and vanilla syrup which transforms into an orange milk chocolate on the mid palate. A cocktail of confectionary that Willy Wonka would be proud of.
Finish: Medium sweet

Bottling Notes
Distilled in November 2016 by Dan and the team at Young Henry’s in Newtown, the spirit was laid to rest for over four years there in a 100L French oak heavy char Apera cask before being transferred to Byron Bay. Once up north, Dan tipped the cask and brought it down to 55% using Byron Hinterland natural spring water and split the liquid into four equal parts. This is the final release from the iconic 10 independent bottling series.
Like Dan’s 9 earlier releases, each bottle is numbered and signed with handwritten details on the back label. Bottle necks are hand dipped in black wax and presented in a branded ‘hessian’ style bottle bag.
