Our Tasting notes.
Nose: Delicate. Sweet and savoury with red currents, toffee apple, almond milk, butter menthol and mint chocolate followed by a lick of eucalyptus
Palate: Sweet and tangy with initial waves of citrus fruits and clover honey followed by sour cherry ‘koutaliou’ (Greek spoon sweet) and mint julip. The peppery character of the young spirit presents itself bringing waves of tannin, red fruit and eucalyptus from the nosing.
Finish: Distinct bush berries, then drying with soft leather, mint leaves and wood in the tail.

Bottling Notes
This is the second release from the (independent bottling) liquid library of Dan Woolley’s extensive, global whisky adventures that was aged at Lord Byron Distillery in Byron Bay. From all around our great country of Australia, spirit has made its way on the highway to Byron Bay to age in the rarest, hand selected oak casks to mature into Highwayman single malt whisky
Two small French oak ex tawny casks married together post-aging then given a second maturation in French oak super heavy char, ex dry red wine cask. This expression is bottled at a lower alcohol level, but still high enough to not be chill-filtered. Each bottle is numbered and signed with handwritten details on the back label. Bottle necks are hand dipped in black wax and presented in a branded bottle bag.
This release also sold out in under 10 minutes on the Lord Byron website and we’ve decided to open and sample every expression that Dan creates for our own individual tasting notes. Check them out below.
