Nose: Raw Brazil nuts, dried mushrooms and truffles, damp Forest floor earthiness, marzipan, Demerara sugar & new leather. Old antique furniture & hints of cacao nibs
Palate: Savoury HP sauce, black liquorice and brown sugar syrup, sweet cigar smoke, wet tobacco and umami savouriness. Black cherry and boysenberry.
Finish: Medium long with balsamic reduction and soft integrated earthy smoky finish.

Description:
From the whisky library of Dan Woolley comes ‘Fires to Floods’, the unleashing of the first ever peated Highwayman whisky. A marriage of unpeated and peated casks with whiskies that range from 2 years to over 3 1/2 years old. Seventeen different casks were used to make this masterpiece including PX sherry, Tawny, Red wine and Bourbon casks. It’s bottled at a cask strength of 53.9% with 320 bottles in the batch.
Many of these bottlings were used for flood relief charity tastings with funds going towards the devastating floods that hit Byron Bay. Each bottle is signed and presented in a branded bottle bag with this particular expression displayed in a limited red and black bag with red labels.
