Official tasting notes.
Nose: Unmistakable Highwayman peat comes through, then earthy notes and a salty and savoury type of smoke. There’s also hints of agave syrup from the tequila finish with dried apricots & spice. Milk chocolate comes on late.
Palate: Beautiful agave sweetness shines but doesn’t dominate – salty mid palate, more savoury notes and soft spice. Gentle peat, beautiful saltiness, rich and complex

Description:
‘Abadia Humeante’ translates from Spanish to English to mean ‘Smoking Abbey’ which is fitting considering this peated whisky was released for the iconic Whisky Abbey event in Melbourne 2022.
To create this expression, Dan Woolley distilled heavily peated Highwayman spirit and then matured the liquid for 2 years and 1 month in 2 x 100L French Oak, super heavy char, Apera (sherry) casks. He then re-racked the contents into 3 x 50L (first fill) Tequila casks for an additional 3 months for added depth and complexity resulting in a whisky with many layers and a subtle yet sweet agave twist. The first single malt whisky in Australia to be aged in tequila casks.
