Official Tasting Notes
Nose: Hints of Espresso crema and dark chocolate is met with dried cranberries and stewed prunes. Black cherries soaked in burnt Demerara sugar with a touch of candied ginger. Subtle clove and freshly baked pecan pie shining through.
Palate: Roasted almonds, nutmeg and pimento all spice upfront with agave syrup, candied orange peel and blackberry jam across the mid palate finishing with sweet lemon drops.

Description:
The new chapter of Highwayman’s whisky library sees the unleashing of this first ever 100% single cask, Byron Bay single malt whisky created at Lord Byron Distillery. The spirit was laid to rest in a 100L Spanish Oak, Pedro Ximenez sherry cask. Each bottle is numbered and the bottle necks are hand dipped in black wax and presented in a solid timber display box.
This inaugural release sold out in under 15 minutes on Highwayman’s website and is destined to become investment grade Australian whisky.
