Nose: Dried muscatel grapes, marzipan & salted caramel. Damp wood and wet soil, toasted walnuts with hints of varnish and powdered drinking chocolate.
Palate: Luscious plump medjool dates with a hint of raspberry tartness meet toasted almonds with a hint of savory sweet umami. Beautiful balance of spirit and oak. With a Medium/Long savory finish

Description:
The new chapter of Highwayman’s whisky library sees the unleashing of their 3rd single malt whisky that was 100% milled, mashed, fermented, distilled, aged and bottled in Byron Bay after being laid to rest in a 100L Spanish oak, ex Oloroso sherry cask.
Each bottle is hand dipped in black wax and presented in a branded timber box. This second release sold out in under an hour on Highwayman’s website and Dan Woolly has sent a small allocation our way for our loyal supporters too.
