Nose: Marzipan and nougat sweetness with subtle hints of hazelnut praline. Dark berries and fruits of the Forrest meet a soft earthy mustiness with a very subtle salty peat. Hints of milk chocolate in the back ground.
Palate: Beautifully integrated oak spice meets a raspberries tartness mixed with an ashy fruit and nut milk chocolate. Hazelnut butter making an appearance on the mid palate finishing with cinnamon spiced blueberry crumble. With a Medium long with subtle fruits and spices dancing with soft ashy salty peat finish.

Description:
This incredibly complex whisky has a multi layered back story to match it. Aged in 4 x 50 litre French oak ex tawny refill casks that were sourced from a ‘very well-known’ Tasmanian distillery before being reasoned with Seppeltsfield tawny for over a year in Byron bays tropical climate. They were then filled, whilst still wet, with Highwayman peated signature spirit and left to age for a couple of weeks shy of 3 years giving this whisky a huge amount of bursting flavour! Bottled at a cask strength of 55%, unfiltered and as pure as whisky gets.
The expression was named in tribute Highwayman’s Winter tour of 2023. With SOB standing for South of Byron. Blink and you would have missed this release and we’ve only got a handful to sell.
