Nose: Honeycomb, white chocolate and soft chewy nougat meet hints of apricot syrup and a faint earthy saltiness with whispers of camp fire smoke.
Palate: Chewy burnt toffee caramels with a flash of cumquat marmalade upfront. Now the nougat makes a reappearance with gentle citrus syrups ending with a savory, salty soft camp fire smoke
Finish: Very long with a lingering chewy sweetness

Description:
Blink and you would’ve missed this wee treat with only 45 bottles released to Highwayman’s member database. This batch is the follow up to Dan’s sold out, inaugural Mullumbim(bee) expression that was released in May 2022. Note the alternative spelling of Mullumbimby as a tribute to the honey influence inspired by the coolest little creatures on earth, the bee!
Highwayman explains it best:
“This is the wonderful and very much anticipated sequel to last year’s Honey barrel matured Highwayman single malt whisky. Mullumbimbee the sequel, sees a peated Highwayman spirited aged in 100L French oak Apera cask for 3 years before being finished for 6 weeks in a 100L French oak ex Highwayman whisky cask that Dan seasoned with honey for around 7 months.
This last honey barrel maturation has really rounded out the peat and given the whisky a wonderful overall balance without being too sweet. Unfiltered and bottled at a cask strength of 55% it’s sure to be a classic among Highwayman fans for years to come”
