Bottling Notes
SYMPHONY Nº1 is Lark’s first blended malt release representing a composition of Tasmanian single malt whiskies, including whisky from the Nant Distillery in Bothwell that is now owned by Lark and some leftover Overeem Vintage.
Crafted from a symphony of complementary casks, Head Distiller Chris Thomson has expertly woven the complexity of American oak bourbon with the balance of sherry and heavier depth of port to form a creamy, oily melody of flavours; a malt whisky that’s full of life from start to finish.
Chris Thomson – Head Distiller at Lark comments:
“We’ve been talking about creating a blended malt here at Lark for a very long time. As far as I’m concerned, we’re amongst the few in Australia who can pull it off.
We began our journey by looking through our portfolios, and were pleased to find that our Bothwell distillery was producing a whisky with some incredible pineapple and tropical notes – that’s really rare. We added a little bit of sherry cask for sweetness, and fortified for depth. There are notes of other whisky genres in there, too, like bourbon and rye. I wanted to create something that would feel relatable. Something that would feel like ‘home’ to anyone who’d experience it.”
