Nose: An initial intoxicating hit of meadow honey, frangipani, and fresh rain develops into light, sweet vanilla bean custard, freshly baked puff pastry and flaked almonds.
Palate: A wonderful light and syrupy viscosity that melts into warm butter and well-balanced oak. Raisins, ginger snaps, stewed stone fruit and Italian soda.
Finish: Light, puffy golden syrup dumplings followed by camomile tea with crumpets and honey. Savoury notes of hay and thyme reinforce the subtle notes of Tasmanian highland peat.

Chris Thomson, head distiller at Lark is known to have a real penchant for oloroso barrels. So, for this release, he’s hand-picked two Australian Oloroso-style casks from Seppeltsfield in the Barossa Valley to finish a combination of ex-Sherry and ex-peated Port single malts from Lark’s Coal Valley Distillery.
The Distillery calls this an:
“…intoxicating combination of toasted pastries and subtle peat smoke with a classic Oloroso finish, melting into warm butter and slowly browning bread… the unmistakable aromas that waft outside your local bakehouse in the early moments of the morning”
