“DC099 has a lovely combination of raisin toast, vanilla cake, ripe pears and honey on the nose. The texture and fruit sweetness are immediately obvious on first sip, with vanilla, stone fruits, chocolate and a strong malt backbone carrying through the finish along with lemon curd, marshmallow and a hint of rose.”

Behold the new evolution of Sullivans Cove Double Cask expression. From now on, Double Cask will be bottled at 45% ABV (instead of 40%). The distillery says they made the change to give this award winning single malt whisky improved grip, texture and length and to be more in line with their single cask expressions.
This current Sullivans Cove Double Cask Batch DC099 is comprised of one 13-year-old French Oak ex-tawny cask, one 13-year-old American oak refill cask, two 12-year-old ex-Bourbon casks, and one 10-year-old French Oak refill cask. This batch is a great example of what their Double Cask does best; combining the rich dried fruit characteristics of French Oak with the bakery fresh vanilla and honey notes of American Oak.
Non-chill-filtered and with no added colour, the whisky is well-dressed, confident and charming, handcrafted to perfection in a bespoke copper pot still and created from renowned Tasmanian barley. It’s then double distilled using pure wilderness water from rainforests and mountains around Hobart.
