Official Tasting notes:
Nose: Soft and warm, broad and round. Monte Carlos fresh from the oven, buttery pastry and shortbread, molasses and some sort of mental milkshake with chocolate, banana and caramel. Waxy bush honey, fresh coconuts, paw-paw, dried mango and passionfruit can’t go unnoticed and a note of dusty chocolate malt (like Ovalteenies).
Palate: Plum blossoms, golden raisins, orange peel, baked apples. Beautiful texture, calling to mind those apricot and coconut squares from health food shops. Very dark toffee, shortbread and a hint of rye bread. Peas covered in loads of butter. Fine tannins.
Finish: Grapefruit rind for life. Sweet and broad, fills the palate. Confection note, cola, white chocolate, and coconut sugar. Quite herbal with nutty and tropical notes, too. Stewed pears and mulled cherries. Vanilla sponge. The texture is really lengthy, and coats the whole palate beautifully.

Bottling Notes
Sold out at the distillery, Double Cask Batch DC107 is a marriage of portions of ten different casks ranging in age from 11 to 17 years. As well as American oak ex-bourbon casks, this batch also contains both first and second fill French Oak ex-tawny casks and whisky from one French oak cask previously used to mature Australian white wine.
