Official Tasting notes:
Nose: Kiwi fruit right away, and then caramelised figs, lime musk, dark strawberry jam and a quintessential Australian fortified note. Guava, glacé pineapple, orange blossom and grapefruit rind. This is a particularly fruity nose! Arrowroot biscuits (very malty), a distant hint of eucalyptus and black tea and sea air.
Palate: Really big citrus drive of orange juice and rind, along with a nice herbal note of bay leaf. A lovely tropical wave comes through with guava, melons, mango and peaches and it has a beautiful, velvety texture backed up with notes of biscuits and white chocolate, a touch of black pepper, toasted coconut and vanilla.
Finish: Canned peaches, tangerine and a hint of black tea on its second round in the pot. Coconut, vanilla, honey and a toffee/fudge character work beautifully with the velvety and gently waxy texture. Hint of a pleasant earthy, mossy note with poppy seeds and shortbread going on for days.

Bottling Notes
Selling out at the distillery in under 20 minutes, this Double Cask batch number DC108 is a marriage of portions from ten different casks, ranging in age from 11 to 17 years. As well as whisky from several American oak ex-Bourbon casks, this batch also contains whisky from both American and French oak casks, which have been previously used for either Tawny, white wine, or red wine.

Non-chill-filtered and with no added colour, the whisky is well-dressed, confident and charming, handcrafted to perfection in a bespoke copper pot still and created from renowned Tasmanian barley. It’s then double distilled using pure wilderness water from rainforests and mountains around Hobart.
