Official Tasting notes:
Nose: Really cool musky ginger. The smell of ripe pineapple skin. Piña colada, coconut cream, and high in the esters (like a Jamaican rum). Cherry Ripe, banana muffins. While there’s a lot of big and deep aromas, there’s a lovely delicate floral note, like frangipani.
Palate: Like lolly water, but not in a shallow sense. This is sweet and deep! Gingerbread, icing sugar, Pfeffernüsse, cinnamon and cumin. Date syrup, coconut and raspberry slice, and bagasse.
Finish: Liquid dates. Cumin, stewed blackberries and anise biscuits. A wonderful and interesting syrupy flavour that lingers, a mix of pineapple and ginger. Delicious.

Description:
Here’s a peach of a Sullivans Cove release from Cask number TD0177 that was filled in December of 2006 and decanted in January of 2021 for a maturation of 14 years in a single, 200-litre, first-fill American oak ex-bourbon cask. With a small out-turn of only 122 bottles, this allocation won’t last on our virtual shelves.
Head Distiller Heather Tillott comments:
“A particularly deep and intense example of an Ex-Bourbon cask. This barrel was quite low in volume, the evaporation fairies had visited it a few extra times. Because of this, it is a more concentrated malt, and it’s all the more delicious for it. This is beautiful.”
